Honey Truffle Sweet Protein captures the sweetness of the honey truffle in a fermentation-produced ingredient designed for modern sugar-reduction work. Manufacturers can deploy it alone or as part of a sweetener system. MycoTechnology formulation guidance notes that sweetness potency increases logarithmically with dose, so bench testing across a range of sucrose-equivalence targets is recommended. For ready-to-mix beverages, dose against the reconstituted finished beverage mass, not the dry packet alone.

Start with application-specific bench trials. MycoTechnology sampling guidance provides sucrose-equivalence (SEV) starting points in water and recommends also testing at approximately 1/2× and 2× the listed starting level. Attributes such as sourness, carbonation, viscosity, bitterness, and saltiness can shift the amount needed. Sweetness potency increases logarithmically with dose.

For ready-to-mix beverages, dose against the reconstituted finished beverage mass, not the dry packet alone.

For sugar reduction in a full-sugar formula, MycoTechnology directional guidance includes reducing sugar by about 30–50% and replacing that sweetness with Honey Truffle Sweet Protein. In no-sugar-added systems that already use multiple non-nutritive sweeteners, directional blending guidance suggests roughly 50–70% of total sweetness from other sweeteners and about 30–50% from Honey Truffle Sweet Protein, then optimize by sensory.
